On a busy day, it can be difficult to put a lot of thought into preparing lunch, so we're happy to share one of our favourite (& quick) recipe. This spinach parantha roll is tasty, healthy and easy to prepare for lunch!
What do you need for 5 pieces?
5 ready-made parathas
100 grams baby spinach
Half cucumber
3 spring onions
Vegan feta cheese
What should you do?
1. Cut the cucumber into thin halves and the spring onion finely.
2. Then, fry the parathas in a frying pan (on medium heat) until golden brown, so that they have a nice crispy layer.
3. Divide the spinach, cucumber and spring onion over the parathas. Crumble the vegan feta into small pieces and sprinkle it over the paratha as well.
