Chole pulao

We eat a chickpea curry (chole) almost every week and also love pulao (rice dish), so we really love this combination! Besides that it has a lot of taste, it is also very healthy. This dish is very tasty in combination with a warm tomato chutney or fresh raita.

What do you need?

  • 480 grams of chickpeas

  • 300 grams of basmati or brown rice

  • 2 tbsp sunflower oil

  • 4 cloves

  • 3 cardamom pods

  • 1 small cinnamon stick

  • 1 star anise

  • 2 bay leaves

  • 1 tsp cumin seeds

  • 1 large onion

  • 1 tbsp ginger garlic paste

  • 2 green chili

  • 3 average tomatoes

  • 2 tsp garam masala

  • 1 tsp salt

  • 0.25 tsp black pepper

  • 500 ml of water

  • Handful of fresh coriander


What should you do?


1. Finely chop the onion and tomatoes.


2. Add 2 tbsp sunflower oil to a pan along with the whole spices: 4 cloves, 3 cardamom pods, 1 small cinnamon stick, 1 star anise, 2 bay leaves and 1 tsp cumin seeds. After 30 seconds, add the onions and 1 tbsp ginger-garlic paste. Also add the two whole green chillies, without the stem (you can remove this while eating).


3. When the onions have become glassy, you can add the tomatoes together with the other herbs. Stir well. After 1 minute, you can add chickpeas together with 300 grams of rice and 500 ml of water.


4. Cook for about 20 minutes and garnish with fresh coriander and serve.
