Rava Uttapam

Rava Uttapam is a kind of dosa from south Indian cuisine, made with semolina (Rava). Unlike a typical dosa, which is thin and crispy, uttapam is thicker and with toppings. I remember my mother often made this for breakfast. She always used different chopped vegetables as a topping to make sure we got enough vitamins.


Duration: 40 minutes

Portion: 6 pieces (2 people)

What do you need?

  • 175 grams of semolina

  • 250 ml of water

  • 2 tbsp lime juice

  • 0.5 tsp baking soda

  • Pinch of salt

  • 1 small red onion

  • 1 tomato

  • A handful of fresh coriander


What should you do?


1. Mix 175 grams of semolina together with water in a mixing bowl. Leave it for 20 minutes.


2. Meanwhile you can finely chop the onion, tomato, and fresh coriander. Tip: You can also use other vegetables, such as grated carrot, chopped bell pepper, and spinach.


3. After 20 minutes you can stir the batter again. Then add 2 tbsp lime juice together with a pinch of salt and 0.5 tsp baking soda. Stir again.


4. Heat a frying pan and grease it with some oil. Take the batter in a large serving spoon and pour it into the pan. Spread gently, but don't spread it too much. When the batter is still raw on top, add the vegetables. Press this gently with a spatula so that it sticks to the batter.


5. Sprinkle some oil on the top and when the bottom is cooked (light brown), carefully turn the Rava uttapam. Fry until the vegetables are light brown in color and serve.


Tip: Delicious in combination with coconut, tomato, or coriander chutney.
