Shahi pulao

Shahi (royal) Pulao, is a popular North Indian dish that is typically served on special occasions and celebrations. The dish is known for its rich and flavourful taste, and it often includes a variety of spices & vegetables. It can be best enjoyed with a choice of raita or tomato chutney.

What do you need?

  • 4 tbsp plantbased butter

  • Handful of cashew nuts

  • Handful of almonds

  • Handful of raisins

  • 6 saffron threads

  • 3 tbsp soy milk

  • 2 bay leaves

  • 1 cinnamon stick

  • 6 cloves

  • 4 cardamom pods

  • 1 tsp cumin seeds

  • 1 large onion

  • 1.5 tsp ginger garlic paste

  • 150 grams of carrot

  • 200 grams of potato

  • Hand frozen green peas

  • 0.5 tsp turmeric

  • 1 tsp red chilli powder

  • 1 tsp garam masala

  • 500 grams of rice

  • 1.5 tsp salt

  • Handful of fresh coriander/mint

  • Half lime


What should you do?


1. Cook 500 grams of rice according to the package.


2. Peel the potato, cut into cubes of 1.5 by 1.5 cm and cook just until tender (10 minutes). The same goes for the carrot, cut it into quarters and add it to the pan with potatoes after 5 minutes.


3. In the meantime you can finely chop the onion. Also put 6 saffron threads with 3 tbsp soy milk in a bowl.


4. Add 2 tbsp vegetable butter in a pan and roast the cashews, almonds and raisins over low heat. When they turn golden brown, you can turn off the fire and set the contents aside.


5. In the same pan you can now add 2 bay leaves, 1 (small) cinnamon stick, 6 cloves, 4 cardamom pods and 1 tsp cumin seeds. Fry on low heat and after 30 seconds add the finely chopped onion and ginger-garlic paste. When the onion is translucent, you can add the boiled potatoes, carrots and frozen peas. Fry for 2 minutes and add the following spices: 0.5 tsp turmeric, 1 tsp chilli powder, 1 tsp garam masala. Stir well over low heat.


6. After 1 minute, add the cooked rice, along with 1.5 tsp salt and stir well. You can now also add the bowl with the saffron threads and soy milk.


7. Put a lid on the pan and leave on low heat for 3 minutes. After this you can add the roasted nuts together with some fresh coriander, some mint leaves (optional) and juice of half a lime. Enjoy!
