Pav Bhaji

This dish originated as a quick lunch dish for textile factory workers in Mumbai. Later it was also served in restaurants all over the city and nowadays it is a famous street food recipe all over India. Pav Bhaji is a spiced mix of pureed vegetables served with bread.

What do you need?

  • 2 tbsp sunflower oil

  • 400 grams of potato

  • 400 grams of cauliflower

  • 300 grams of carrot

  • 1 green pepper

  • 250 grams of green peas (frozen)

  • 1 large & small red onion

  • 12 cloves of garlic

  • 2 cm ginger

  • 1 or 2 green chili

  • 3 tomatoes

  • 2 tsp pav bhaji masala (or garam masala)

  • 1 tsp salt

  • 1 tsp paprika powder

  • 0.5 tsp turmeric

  • 20 grams of fresh coriander

  • Vegetable butter

  • 6 balls (white or brown)

  • 1 lime


What should you do?


1. Cut the potato (without skin), cauliflower, and carrot into cubes of 1 by 1 cm and cook for 12 minutes.


2. Meanwhile, you can cut the onion into coarser pieces and the garlic, ginger, and green chili into fine pieces. Put the tomatoes in a food processor or chop them very finely.


4. Put 2 tbsp sunflower oil in a deep or wok pan and add the onion, garlic, ginger, and green chili and fry for 2 minutes. Then add the tomato and stir well for 3 minutes.


5. Now add 1 tsp pav bhaji herbs and 1 tsp salt and stir well for 1 minute.


6. Add the cooked vegetables and 125 ml of water. Stir well once, then put a lid on the pan and let it cook for 5 minutes.


7. Use a potato masher to mash the vegetables. Then add 450 ml water, green pepper, and green peas, and stir.


8. Then add 1 tsp pav bhaji, 1 tsp paprika powder, and 0.5 tsp turmeric, stir, and let rise for 5 minutes.


9. Finely chop the coriander leaves and use 2/3rd to garnish the pav bhaji. Also finely chop the small onion and put it together with lime wedges in a separate bowl, to garnish the pav bhaji later.


10. Cut open a bread bun and garnish with butter, squeeze with a garlic press, and a garlic fine, and add some fresh coriander and bake golden / brown. Repeat with all buns. Dip them in the Bhaji and enjoy!
