Coconut laddoo

India has countless variations of laddoos, a sweet, round snack that is usually eaten during celebrations. If you like coconut, this recipe is for you! With only 3 basic ingredients (coconut, soy milk and sugar) you can have it on the table in no time.

What do you need (for around 12 pieces)?

  • 200 grams grated coconut

  • 350 ml soy milk

  • 50 grams of sugar

  • 1 tsp cardamom powder (optional)


What should you do?


1. Add the grated coconut to a large frying pan or wok and roast for about 2 minutes over medium heat. It is important that you keep stirring so that it does not burn.


2. Next, add soy milk, stir well and make sure that the coconut in the pan is mixed well together with the milk. After a couple of minutes, you can add sugar. Turn the heat to low and keep stirring continuously.


3. After about 15-20 minutes, the soy milk and melted sugar will evaporate and become crumbly. Then let the mixture cool down.


4. If desired, add 1 tsp cardamom powder and stir well into the mixture.


5. Make small round balls of the mixture with your hands and roll in a layer of coconut grater if necessary.


Tip: You can store the laddoos in an airtight container in the refrigerator for about 1 week in the refrigerator.
